Expose User Registration Date in Pelcro.user.read() SDK method Response

🔍Problem Statement

We are implementing analytics improvements that rely on the data returned by Pelcro.user.read(). While subscription-related dates are available, the user's registration date is not returned, preventing us from including it in our data layer for analytics and tracking purposes.

💡User Story

We want the user's registration date to be returned by Pelcro.user.read() SDK method so that we can include it in our analytics and tracking implementation alongside the existing subscription dates.

🎯Definition of Done

✔ Pelcro.user.read()SDK method returns the user's registration date.

✔The registration date is returned in a consistent YYYY-MM-DD format.
