Adjust Timestamp Timezone

If I want to customize the default time (UTC) to match my timezone (CST), I must do so by editing Stripe settings. However, our university doesn’t allow integration with a payment gateway. As a result, I cannot adjust my timezone in Pelcro to reflect accurate timestamps in my region.

I ask that the Pelcro team introduce a way to adjust one’s timezone without requiring use of a payment gateway’s settings.
